🛒 INGREDIENTS (Serves 2):


For the sauce:


For the pasta dough:

  • 2 eggs

  • 200g 00 flour



👩‍🍳 STEP-BY-STEP:


  1. Whisk the egg yolks in a bowl over a double boiler (bain-marie) until they double in volume and lighten in colour.

  2. Add grated Parmesan and crispy bacon. Stir until the sauce thickens and looks silky.

  3. For the pasta: Mix flour and eggs, knead until smooth, rest the dough, then roll it thin and cut into your favourite shape.

  4. Cook the pasta in salted water, then toss it straight into the sauce.

  5. Emulsify with a splash of pasta water until glossy and creamy — and that’s it!
