Prosciutto croquettes

Crispy outside, soft and cheesy inside… the kind of easy recipe that turns a simple night into a proper event.
Croquettes started in France 🇫🇷, but they quickly made their way into family kitchens everywhere. For many of us, they became that once in a while treat… the one that meant something special was coming.
When mum fried something, you showed up early.

🛒 INGREDIENTS:
1 kg potatoes
120 g @dorsognasmallgoods Prosciutto, finely chopped
1 cup grated cheese (mozzarella or tasty)
2 tbsp corn starch
½ cup breadcrumbs plus extra for coating
2 eggs
2 garlic cloves, minced
1 tsp mixed herbs
Salt and pepper
Oil for frying
👩🍳 STEP-BY-STEP:
Peel, cube and boil the potatoes until soft, then drain, mash and let them cool completely.
Mix in the prosciutto, cheese, corn starch, breadcrumbs, eggs, garlic, herbs, salt and pepper until well combined.
Lightly oil your hands and shape into croquettes.
Roll each one in breadcrumbs until fully coated.
Fry in hot oil until golden, crispy and perfectly cooked.
Serve hot with tomato sauce and a sprinkle of parsley.
Crispy, salty, cheesy… straight back to mum’s kitchen.
