Turkey Burger with Spicy Sliced Chorizo

Here’s a challenge this Italian isn’t scared of: burgers! But with some Italian attitude!
It’s World Burger Day — and we’re celebrating with a Turkey Burger with spicy sliced chorizo!

🛒 INGREDIENTS: (Makes two burgers):
For the patties:
250g turkey mince
1 garlic clove, minced
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
1 tbsp grated parmigiano
Lemon zest (just a bit!)
1 tbsp olive oil (for frying)
For the crispy chorizo:
6 thin slices of D’Orsogna salami-style chorizo
For the special sauce:
2 tbsp mayo
1 tbsp ketchup
1 tsp Dijon mustard
½ tsp Worcestershire sauce
½ tsp pickle juice
¼ tsp smoked paprika
To assemble:
2 burger buns (brioche or sesame)
2 slices of cheddar cheese
6 pickle slices
2 crisp lettuce leaves
2 tomato slices
👩🍳 HOW TO MAKE IT:
Mix all the sauce ingredients until smooth and set aside in a small bowl.
In another bowl, combine the turkey mince with garlic, paprika, salt, pepper, Parmigiano and lemon zest. Shape the mix into two patties slightly larger than your buns (they’ll shrink as they cook).
Heat a dry pan over medium heat and fry the chorizo slices on each side for 1–2 minutes until crispy. Set aside.
Add a drizzle of olive oil to the same pan and cook the patties for 4–5 minutes per side, until golden and cooked. In the final minute, place a slice of cheddar on each patty and cover the pan with a lid so it melts perfectly.
Lightly toast the burger buns, cut-side down, in the same pan to soak up all that flavour.
To assemble, spread the special sauce on the bottom bun, then layer on the lettuce, cheesy turkey patty, crispy chorizo, pickles and tomato. Add more sauce to the top bun and close it all up.
Serve hot with fries or a crisp side salad — and enjoy every bite.
