South American Empanadas

They’re little hand pies loved across South America. Think golden, flaky pastry pockets filled with savoury goodness. Perfect for sharing, snacking or packing in a lunchbox!
This time I used store-bought coloured doughs for fun, but you can make my gluten-free version too (DM me if you want the recipe).

🛒 INGREDIENTS (makes 12 of each):
Ham & Cheese
1 pack English ham (@dorsognasmallgoods), chopped
150 g stracchino cheese
60 g blue cheese
Salami
120 g Hungarian salami (@dorsognasmallgoods), chopped
100 g cheese (mozzarella or tasty)
½ red capsicum, diced
1 tbsp chopped parsley
Bacon & Cheddar
120 g bacon (@dorsognasmallgoods), cooked and chopped
120 g cheddar cheese, grated
1 green chilli, finely chopped
👩🍳 STEP BY STEP:
Prepare and mix the different fillings.
Add about 1 tbsp of filling in the centre of each dough circle.
Fold, seal and make the repulgues (traditional crimped edge), or press with a fork if you prefer.
Bake at 200 °C for 18–22 minutes until golden and crisp.
