🛒 INGREDIENTS (Makes 10 to 12 muffins)


Wet ingredients

2 cups grated zucchini, squeezed dry

2 x 80 g packs @dorsognasmallgoods Deli Fresh Lightly Smoked Turkey, chopped

2 large eggs

½ cup Greek yoghurt

⅓ cup extra virgin olive oil

¼ cup milk

1 tsp mustard

¼ cup spring onions, finely sliced


Dry ingredients

1 ½ cup self-raising flour

1 cup grated cheddar cheese

½ cup corn kernels, optional

Pinch of salt, plus pepper and garlic powder to taste



👩‍🍳 STEP BY STEP

  1. Preheat & prep: Preheat oven to 180°C and line a muffin tray.

  2. Remove moisture: Squeeze the grated zucchini well to remove excess liquid.

  3. Mix it up: Add all ingredients to a large bowl, adding the flour last. Stir until just combined.

  4. Bake to golden perfection: Spoon mixture evenly into the tray, top with extra cheddar and bake for 20 to 22 minutes until golden and firm on top.
