Smoked Mortadella Sandwich

šŸ›’ INGREDIENTS


For the sandwich:


  • D'Orsogna Mortadella

  • Smoked focaccia

  • Aged cheddar, sliced

  • BBQ sauce (recipe below)



BBQ SAUCE


  • 250 g ketchup

  • 90 g brown sugar

  • 60 ml apple cider vinegar

  • 30 g maple syrup

  • 1 tbsp grain mustard

  • 4 dashes Worcestershire sauce

  • 1 tsp salt

  • 1 tsp smoked paprika



BBQ SAUCE METHOD


Add everything to a saucepan and cook over medium-low heat for 20 minutes, stirring occasionally, until thick and glossy.



šŸ‘©ā€šŸ³ STEP BY STEP


  1. Smoke the D’Orsogna mortadella at 135°C for 2 hours.


  2. Glaze generously with BBQ sauce and return to the smoker for 1 more hour.


  3. Rest for 10 minutes, then slice nice and thick.


  4. Load onto smoked focaccia with heaps of aged cheddar and melt until completely ridiculous.


  5. Eat immediately. Repeat if necessary.
