Smoked Mortadella Sandwich

š INGREDIENTS
For the sandwich:
D'Orsogna Mortadella
Smoked focaccia
Aged cheddar, sliced
BBQ sauce (recipe below)
BBQ SAUCE
250 g ketchup
90 g brown sugar
60 ml apple cider vinegar
30 g maple syrup
1 tbsp grain mustard
4 dashes Worcestershire sauce
1 tsp salt
1 tsp smoked paprika
BBQ SAUCE METHOD
Add everything to a saucepan and cook over medium-low heat for 20 minutes, stirring occasionally, until thick and glossy.
š©āš³ STEP BY STEP
Smoke the DāOrsogna mortadella at 135°C for 2 hours.
Glaze generously with BBQ sauce and return to the smoker for 1 more hour.
Rest for 10 minutes, then slice nice and thick.
Load onto smoked focaccia with heaps of aged cheddar and melt until completely ridiculous.
Eat immediately. Repeat if necessary.
