Lunchbox Zucchini Muffins

Cooking time: 20 mins
Serves: 12
Ingredients:
2 eggs
1/2 cup vegetable oil
1 medium Brown Onion - diced
3/4 cup D'orsogna Champagne leg Ham - chopped in small squares
1 cup of Tasty cheese - grated
2 Zucchini (grated equivalent to 3 cups) - grated
1 cup Self raising flour
Olive oil spray (to line muffin tray)
Method:
Preheat oven to 200°c fan forced
In a large bowl add the eggs and beat together
Add the vegetable oil and whisk together until it emulsifies
Add D’orsogna Ham, Onion & Zucchini to the bowl
Add the grated cheese
Finally add the flour and gently mix to combine
Generously spray a 12 pan muffin tray with olive oil
Using two tablespoons or an ice-cream scoop, evenly distribute the mixture into the muffin tray
Bake in the oven for 20-22 mins until golden
Tip - clean muffin tray straight after use, to remove baked on stains using the dish wand
