Lunchbox Zucchini Muffins

Cooking time: 20 mins

Serves: 12

 

Ingredients:

 

  • 2 eggs

  • 1/2 cup vegetable oil

  • 1 medium Brown Onion - diced

  • 3/4 cup D'orsogna Champagne leg Ham - chopped in small squares

  • 1 cup of Tasty cheese - grated

  • 2 Zucchini (grated equivalent to 3 cups) - grated

  • 1 cup Self raising flour

  • Olive oil spray    (to line muffin tray)

 

Method:

 

  1. Preheat oven to 200°c fan forced

  2. In a large bowl add the eggs and beat together

  3. Add the vegetable oil and whisk together until it emulsifies

  4. Add D’orsogna Ham, Onion & Zucchini to the bowl

  5. Add the grated cheese

  6. Finally add the flour and gently mix to combine

  7. Generously spray a 12 pan muffin tray with olive oil

  8. Using two tablespoons or an ice-cream scoop, evenly distribute the mixture into the muffin tray

  9. Bake in the oven for 20-22 mins until golden

 

Tip - clean muffin tray straight after use, to remove baked on stains using the dish wand
