Creamy Chorizo Pasta

Chorizo brings serious flavour and that irresistible sizzle to the pan. It is a dish that cooks quickly and is perfect for a cosy night in, a quick dinner after work, or when you want a pasta recipe that feels a little fancy but takes under 30 minutes.




🛒 INGREDIENTS (Serves 2 to 3):

  • 200g pasta

  • 120g @dorsognasmallgoods chorizo, sliced

  • 1 cup mushrooms, sliced

  • ½ red onion, finely diced

  • 2 to 3 garlic cloves, minced

  • 3 tbsp tomato paste

  • 1 tsp paprika

  • ¾ cup thickened cream

  • 40g grated Parmesan

  • 1 tbsp lemon juice

  • ½ cup chopped parsley

  • Salt and pepper


👩‍🍳 STEP BY STEP:

  1. Salted water. Rolling boil. Pasta drops. Cook until al dente and reserve a little pasta water before draining.

  2. Hot pan. Chorizo hits. Listen to that sizzle. Let the @dorsognasmallgoods chorizo release its smoky oil and crisp up.

  3. Mushrooms straight into that chorizo oil. Let them caramelise. Do not stir too much. Let them develop colour and flavour.

  4. Onions in. Cook until soft. Add garlic and stir quickly until fragrant.

  5. Tomato paste and paprika in. Cook until it darkens slightly and starts to catch on the pan. This builds depth and richness.

  6. Pour in the cream and bring to a gentle bubble. Add a splash of reserved pasta water to loosen the sauce.

  7. Parmesan rains down. Stir and watch it turn glossy and silky.

  8. Add the pasta. Toss everything together and let it bubble for a minute so the sauce clings beautifully.

  9. Finish with lemon juice, parsley, salt and pepper to taste.


Close your eyes and just listen. Smoke. Sizzle. Stir. This creamy chorizo pasta is the ultimate quick dinner and easy recipe you will make again and again.
