Mushroom and Bacon Quiche

Golden crust, creamy filling and smoky @dorsognasmallgoods bacon make it pure comfort food.


Save this recipe because it will rescue you on those nights when you don’t know what to cook.




🛒 INGREDIENTS:


For the filling:

1 capsicum, diced

1 red onion, diced

150 g mushrooms, sliced

1 packet @dorsognasmallgoods diced bacon

100 ml cream

3 eggs

300 g grated cheese mix

1 tsp stock powder

1 tsp paprika

Black pepper to taste

1 tsp mustard

Butter for greasing


For the dough:

  • 1 tbsp chia seeds + 100 ml water (to make gel)

  • 250 g gluten-free flour blend

  • 50 g chickpea flour

  • 50 ml olive oil

  • Salt to taste

  • Smoked paprika (optional)



👩‍🍳 STEP-BY-STEP:


  1. Sauté the filling: Cook bacon until golden, then add onion, capsicum and mushrooms. Season with paprika, stock powder and pepper.


  2. Make the custard: Whisk eggs with cream, fold in cheese and the bacon veggie mix.


  3. Prepare the dough: Mix chia gel with flours, salt, paprika and olive oil. Knead until smooth, then rest for 30 minutes. Line a buttered tray, pierce it with a fork, brush with mustard, and dry it under the grill to avoid sogginess.


  4. Bake: Pour in the filling, bake at 180°C for about 30 mins until golden and set.
