Roast Crackling Leg Ham with Golden Syrup Baked Apples

🛒 INGREDIENTS:
1 D'Orosgna Crackling Leg Ham
¼ tsp Extra virgin olive oil
6 Red Apples
6 Thyme Sprigs
¼ cup Golden Syrup

Preheat your oven to 240°C or 220°C fan forced. Line a roasting pan with aluminium foil for easy cleanup. Pat the ham rind thoroughly dry with paper towels to help the crackling become crisp. Place the ham in the prepared pan, rub a pinch of salt into the rind, and drizzle with ¼ tbsp olive oil, ensuring it is well coated.
Place the ham in the preheated oven and bake for 1 hour or until the rind is golden and crispy. Keep an eye on the crackling to prevent it from overcooking. Once done, remove the ham from the oven, cover loosely with foil, and rest for 30 minutes to retain juiciness.
While the ham is resting, reduce the oven temperature to 180°C or 160°C fan forced. Line a baking tray with baking paper. Using a sharp knife, lightly score around the centre of each apple. Arrange the apples on the lined tray, place a sprig of thyme on each, and drizzle with the syrup.
Bake the apples for 25 minutes or until golden and tender, with the syrup caramelising slightly around the edges.
Arrange the crispy ham and baked apples on a serving platter. The sweet, thyme-infused apples are a delightful side to the savoury ham, perfect for a special occasion or festive meal.
